Another recipe from Harley at the Embassey 14 movie theater in San Antonio. You should definitely check them out. This one changes as you drink it because the chocolate bitters sinks to the bottom. As you get closer to the end the chocolate makes itself more and more prevalent.
- 2 oz Pineapple Infused Tequila
- 1 oz Fresh Lemon Juice
- 1 oz Lemon Popcorn Syrup
- 4-6 dashes Aztec Chocolate Bitters
Combine the tequila, lemon juice and syrup in a shaker with ice. Shake thoroughly. Douoble strain into a chille coupe glass. Add the bitter in the center of the drink so it sinks to the bottom.
To make the Lemon Popcorn Syrup, just start with making simple syrup (I use 2 cups sugar and 2 cups water) over the stove in a pot. Get it to a light simmer. Add the zest from 3 lemons and let simmer for 10 minutes. Now add a handfuls of pre-made popcorn. I buy the big bag of very yellow popcorn at the grocery store. You know... that one that actually tastes a lot like movie theater popcorn, but is bad for you (calorie-wise). The popcorn with shrink drastically. Add more handfuls of popcorn. Let simmmer for about 10 minutes. Strain through cheese cloth into a large squeeze bottle.
