I got this recipe from Coctail Chemestry (link). It is a wonderful twist on the traditional Old Fashioned.
- 2 oz Hickory Bacon Infusion Bourbon (Four Roses Single Batch prefered)
- 1/4 oz Maple Syrup
- 2-3 dashes of Angustora Bitters
In a rocks glass with one large ice cube, pour bourbon over ice. Add maple syrup and bitters. Stir to chill and for dilusion. Add a dark cherry and orange swath for garnish. Ideally, flame the orange peel.
To infuse the bourbon, empty a bottle of Four Roses Bourbon into a large glass bowl. Fry Hickory Smoked Bacon in a pan. Pour 1/4 - 1/3 cup bacon fat into the bourbon and stir. Called Fat washing (fat won't disolve in water, but it will disolve in ethanol). Cover the bowl with a lid and let sit for 4 hours at room temperature. Put in freezer for 2 hours. Remove from freezer and strain out the fat solids and put back in the bottle.
